My bridal shower today!!
I have been looking forward to this for so long – and I can’t believe the day is finally here
Needless to say, my day is going to be packed with friends and fun things, so blogging is going to take a place on the back-burner today.
Can you blame me?
But because I left you hanging yesterday, I couldn’t do it again today! So let me leave you with a recipe that you’ve GOT to try. It meets all of the criteria for something I’d make: simple, quick and super delicious.
Italian Chicken-Tomato Pie
What You’ll Need
2 1/4 cups chopped rotisserie chicken
1 baked 9 inch deep dish pie crust
1/2 cup pesto
2 medium tomatoes, thinly sliced, drained on paper towels
2 tsp all-purpose flour
1/8 tsp pepper
1/2 cup mayo (I’m not a mayo fan, so sour cream and Greek yogurt are my favorite substitutes)
1 cup five-cheese Italian shredded cheese
1. Heat oven to 400. Arrange chicken over crust and spread with pesto.
3. Sprinkle with flour and pepper. Spread with mayo (or sour cream or Greek yogurt)
4. Sprinkle with cheeeeese.
5. Bake for 20 to 25 minutes, or until hot and cheese is melted.
6. Serve and enjoy!! 😀
