Good morning and happy Monday! I hope your weekend was as enjoyable as mine
Jamie and Emily made the drive up from Richmond to spend Saturday with me while Cory was at our friend’s bachelor party (Oh hay, Stephen!)
Our time together on Saturday was quite wonderful. We drank, ate Mexican and laughed until our sides hurt. I was so wound up from pending wedding things, that I desperately needed a sleep over to calm me down and get my head in the right place
Speaking of Mexican food, I made a super easy dip/snack that I think you might like. A friend’s sister brought it to a party last summer, but this is the first time I’ve finally gotten around to making it.
2 15oz. cans of Black Eyed Peas
2 10 oz. cans of White Shopeg Corn
2 11 oz. cans of Yellow Niblet Corn
1 15 oz. can of Black Beans
2 2.5 oz. cans chopped black olives
2 4 oz. cans of chopped green chillis
2 cans of petit cut tomatos
1 bunch of sliced green onions (only use 3 or 4 stalks)
1/2 tablespoon of minced garlic
16 oz. bottle of zesty italian dressing
Drain all the ingredients (I rinsed most of the ingredients in attempt to cut down on some of the sodium) and mix together in a big bowl – and you’ve got a quick and easy snack!
Needless to say, after eating and drinking to our heart’s/liver’s/stomach’s content, Emily and I wanted to start off our Sunday with a little circuit workout that she learned from her McSteamy personal trainer.
We started off with a 10 minute jog, which helped warm us up and get our hearts pumpin’.
Squats – 20 reps, body weight
Seated Rows – 20 reps, 30 pounds
Push ups – 20 reps, body weight
Abs – Go ask Emily for the names of each move!
Shoulder Press – 20 reps, 10 pound dumbbells
Lat pull down – 20 reps, 30 pounds
Weighted squats – 20 reps, 10 pound dumbbells
It was a great workout and I was proud of us for actually sticking to our plan and making it to the gym on a Sunday morning.
I’ve never been on a diet, and hopefully I never will – but for the next 12 days, I’m going to try to be extra healthy. No one wants to feel bloated on her wedding day, right? 😉
This morning I nixed the cereal combo (my eye is still twitching) and went for an egg scramble with 1 egg, 1 egg white (three tablespoons – does that equal one egg white?), mushrooms, a pinch of cheese, onions and cowboy caviar.
Some cantaloupe and iced coffee on the side made it a well-rounded meal that should hold me over until lunch. I hope.
